Fish Cakes

Ingredients
  • 500g Fish
  • 2 large potatoes
  • ¼ cup chopped Parsley
  • 1 Tbsp Mind Your Own Brisket
  • 1 brown onion (chopped)
  • 1 Tbsp Parmesan Cheese
  • Breadcrumbs
  • Oil (for frying)
Method
Chop fish and potatoes. Par boil potatoes in water. Add fish and boil together with potatoes until soft. Drain, mash & set aside to cool.
Combine all other ingredients (except frying oil & breadcrumbs) in a mixing bowl
mix in cooled potato and fish
  • Spoon out mixture into patties on a greased baking tray
  • Refrigerate patties for an hour at least (overnight is better)
  • Coat patties lightly with breadcrumbs
  • Heat oil in deep pan to 180C/355F (drop in a few bread crumbs to see them fry as a test if you need)
Fry each patty until golden brown
Drain on paper towel before serving with your favourite vegetables or a fresh salad
